As the fourth generation to nurture the same oak trees overlooking the Hakarimata ranges in the Waikato, Dan tends to each animal individually. Free-ranged and grass-fed, they are afforded the space, comfort, and time to develop, and enjoy the cleanest air and freshest water throughout their paddock to plate journey. They are grain-finished to ensure the maximum expression of deep marbling and eating quality exists in every mouthful.
